Monterey is a semi-hard pressed cheese. Moderate cheese taste (from slightly sweet to sharp), without extraneous tastes and odors. The taste is slightly sour, the presence of slight bitterness is allowed. In the section, semi-hard cheese has a pattern consisting of medium or small eyes, various shapes (rounded or slit-shaped) and arrangement.
